Easy and very simple Avocado brunch with Feta cheese and Pesto on top
Are you a brunch person? Because, to be honest, I’m not really. Or .. Ok, I take that back. I am a brunch person. And it’s only because I’m just NOT a morning person. I hate mornings. Not that kind of mornings, because mornings I like, when the nature is waking up and the beautiful view when the sun comes up. But I don’t like the waking up in the morning. I wish I could get up at 7 or at least 8 am every morning though. But I just can’t. I hate it. I like and prefer more working on evenings or sometimes nights. At evening time I have the most energy, mood and joy. I like evenings and nights. Sometimes I’m working very late and then I would even watch a movie until 1 or 2 am. Yep, that’s me. An Evening person.
So back to the point of that brunch. I do eat brunch because when I get up, it’s just too late for breakfast. Literally. So I eat something very small and I call it more Brunch than breakfast. And sometimes I would even eat lunch right away. Because when I get up I’d like to have a coffee first. That’s my first favorite thing in the morning. I love to enjoy my coffee when I wake up and also to have time to completely wake up and just feel alive. I know, it sounds funny, but this just takes a little while for me. So and then after that coffee-morning-waking up process takes that long that it’s already time for lunch. And I just go cook the lunch and eat it. And that’s sometimes my first meal of the day. I’m ashamed. Only a little. Ha-ha. But I’m working on it. I promise.
And that’s where this idea of an easy and quick Avocado brunch came from I guess. Because it’s easy and very quick. And I personally like quick breakfast or brunch when I finally decide to have a breakfast or I somehow woke up early that morning, surprisingly and I have enough time for breakfast. Unless it’s a weekend and I have a plenty of time and I can have a huge breakfast as long as I want.
So what’s the deal with the Avocado Brunch? Well … it’s basically and obviously for avocado lovers, ha-ha. Just kidding. No, I’m a little serious, but not only avocado lovers. It’s for everybody of course.
Avocado lovers? Gosh, that’s sounds weird.
It’s because I love avocado. But I didn’t use to before.
I think it was the time when we were in England with Adam. We were working full time jobs which was really exhausting. We came from work and most of the time we were sleeping. So we had only just a little time to cook something for dinner, lunch for the next day, wash up and go to sleep. Many times we would eat something very quick and easy for dinner because we were so tired to cook something. Or I would just take an avocado, cut it in half, sprinkle with salt and pepper and eat it with a spoon just like that. And since then I’ve been doing it this way. Only this time I’ve stepped into the next level. Next level includes:
- feta cheese
- best of all: Pesto

Easy Avocado BrunchPrint Recipe
- 1 Avocado
- 1 Tbsp Olives
- 1 Tomato
- 2 Tbsp Feta Cheese
- 1 Tbsp Pesto
- Black pepper
Cut the avocado into half and take out the pit.
Cut the feta cheese, tomato and olives into small pieces and place it on both avocado halves. Sprinkle with black pepper and top with the pesto.
Serve with a toast or baguette if you like.
