Easy Indian-Spiced Potatoes with corn and peas

Very easy and very quick Potatoes with corn, peas and Indian seasonings. You have yourself a taste of Indian food on your kitchen table just in few minutes.

From the very beginning I loved Indian food. Maybe I have lived in India in my past life 🙂 Who knows. Even at home we were cooking Indian food, had an Indian cookbooks with recipes. And my family love spicy food and all the Indian seasonings. Specially my dad.

We were traveling to the New York by holidays and we always stopped by an Indian district called ,,Little India” I think. There are Indian shops and restaurants where we have always seated and ate some delicious Indian food.


Those Indian Potatoes are from some Indian cookbook I guess. I don’t really remember because my dad was making them since very long time.

They are very easy to make, and also very quick. You just cook the potatoes as usual, mix them with corn and peas and add all the Indian seasonings into it. And that’s it. Very quick and easy.

And you have ,,kind of” an Indian food on your kitchen table, where ever you are.

The main seasonings for Indian food (maybe even for every Indian food) are Turmeric and Coriander.

Turmeric is the spice that gives food its yellow color. And it’s very healthy for our body and brain.

It has been used in India for thousands of years as a spice and medicinal herb. Curcumin is the main active ingredient in turmeric.

Also chili is the main seasoning in Indian meals. That’s one of my weakness – Spicy Food! I love spicy meals, hot spicy meals. Even that spicy that burns you everywhere and in your mouth is literally a FIRE! I know, sounds horrible, but I love it. I only talk about that fire in your mouth just at that day. The next day fire is … well I’m not gonna talk about that.

Ok that been said and now let’s get on with it.

Easy Indian-Spiced Potatoes with corn and peas

Peel the potatoes, cut them into small pieces and cook them until soft.

Peas and corn put together in a small pot and soak them with boiled water. Leave them aside to soak for a few minutes.

Take a big pan (the best is Wok, but if you don’t have one the big pot will do just fine) and drizzle it with olive oil. Cut the onion to small pieces and add it into the pan. When the onion is soft add the mustard seeds and let them fry a little. When the seeds will start to make popping sound add the rest of the seasoning and let each to fry 10 seconds before you add next seasoning. Turmeric have to be the last one! Constantly stir every seasoning.

Now drain peas and corn from water and add them into the pan. Stir well with all the seasonings. Let it fry for few minutes (4-5 min).

When potatoes are cooked add them into the pan and stir well until everything is well combined. Everything should be covered with all the seasonings and should have a lightly yellow brownish color. Serve to the ball and that´s it 🙂

Notes

If the potatoes mixture doesn’t have enough yellow color you can add more turmeric as well. It will look and taste delicious believe me 😉
