Famous and easy family loving Carrot Cake. This deliciously cinnamon-tasting carrot cake is stuffed with Spelt flour, brown sugar and lots of carrots. Easy to make even by young children 🙂
You wouldn‘t believe how the story of this deliciously tasting carrot cake began. It’s actually sad but very funny on the other side. At least for me it was sad for the first time. But now when I think about it and write it down for you I can’t help not to laugh.
So one day I baked this ,,deliciously tasting and my family loving Carrot cake” . I was preparing the cake for taking a pictures of it. Outside after many and long days of raining was finally nice and sunny. It kind of made me felt like taking it out for photo shooting. So I did. I took my dads outside table in the middle of our garden, which is very big and fool of trees and bushes by the way. So I found some good looking place where to put the table.
Finally I took the stuff for photo shooting like tea towel, plates, forks, some arangements and of course the carrot cake which was impatiently waiting in a fridge. I put everything on that table including the carrot cake which smell was spread all over our garden. I remembered that I forgot the most important thing for photo shooting. My dear and first bought camera. So I had to go back to the house and get it. And in that second I noticed our dog Foxi was walking around the table looking on my carrot cake with a spits on his mouth. My first thought was ,,Oh my god, No” I would never think that he would do something to that cake or eat it because he never did such a thing ever before. So I stayed calm. But just in case I told him very calmly ,,Foxi, do not touch this cake! I know it looks delicious and smells even stronger for you, but please be a good doggy and DO NOT touch that! “ He looked that he understand.
So I went to the house which was only a few steps from the garden with a thoughts that I’ll be back in a second and nothing will happen to my dear carrot cake. I took the camera and I saw a cup of coffee on a kitchen table which was also prepared for the photo shooting. I took the coffee and camera and went out to the garden.
And then I saw something horrible. Our sweet but sometimes not so sweet dog Foxi was eating my carrot cake. My baked with patience and love carrot cake. His front paws where on a table and his head fully in that cake eating the top of it. I couldn’t believe it. I was speechless and breathless in one hand holding my camera and in the other coffee. Few seconds I didn’t know what to do. I was just standing on one spot and watching our dog eat my carrot cake. In one second I though it was very funny to see that scene. But it made me angry anyway.
I finally shouted on him. He immediately ran away. I was fast walking to my cake and saw the mess. I put down the camera and coffee and shouted on Foxi again. ,,Poor dog” are my thoughts now, but not then…haha.
I pull him by his collar and tried to take him to his dog house. He was struggling obviously. He didn’t like what I was doing with him but I didn’t care. He deserved it. At least in that moments. I know that that cake smelled deliciously and for him must have even more. And I know that he is just a poor dog with perfect smell and big mouth but I was angry, oh god I was so angry.
I put him on a leash that made him stay in his house and just a few steps outside his house but nowhere further and especially near my poor carrot cake.
I went back to the table and saw again that big mess. My carrot cake was nearly destroyed. Not all but a seemed like a lot. I was standing and looking on it like covered with boiled water. I started to cry. It felt like something precious to me was destroyed. Even though I knew it was just a stupid cake made with love, patience, happiness, desire, good looking and deliciously smelling but still ,,stupid cake” I know, I know.
,,What now?” I was thinking. ,,What to do with this now?” I took that nearly destroyed cake back to the house just to show it to my dad. I hardly felt Adams hands on my back which were trying to calm me and feel my sadness. I didn’t even noticed when did he came to me.
When my dad saw that before nicely looking and now all destroyed cake he didn’t know if he should laugh because it was kind of funny on the other side, or feel the pity for me. So he just came up with ,,Oouuu … “
Than he very gently tried to cut the destroyed side. It was left just about 2/3 from the cake, luckily I wasn’t in that house longer. I was able to take some pictures from the rest. And it was luckily enough for everybody. And of course even for our dog Foxi left some. That cut that my dad took from the cake was of course left for him.
So everybody was satisfied. Also me. After about half an hour when all the angryness was gone 🙂 Now its just a funny story for me, not sad or upset. And now I know why Foxi took the courage and took a bite of that carrot cake. Because ,,Boy it is sooo delicious!” So I don’t blame him for that. Haha.
Trust me. Or at least trust my beloved dog Foxi and make this carrot cake to your family or just to yourself. You have to try it. But be careful if you have a dog, because … you know … 😉
Famous overnight Super-Fudgy Carrot CakePrint Recipe
- 2 cups Spelt flour
- 1 1/2 cups Brown Sugar
- 1/2 kg Carrots (grated)
- 1/2 cup ground Nuts (any kind)
- 2 tsp. Baking Powder
- 1 tsp. Baking Soda
- pinch of Salt
- 1 Tbsp. Cinnamon
- 1 tsp. Vanilla extract
- 1 1/3 cup Oil
- 4 Eggs
- 100g Butter (room temperature)
- 150g powdered Sugar
- 400g Mascarpone / Philadelphia soft Cream Cheese
- 1 tsp. Vanilla extract
Preheat the oven for 360 degrees.
Mix all the wet ingredients with carrots together in a bowl. In other bowl mix all the dry ingredients and then mix all those two bowls with ingredients together. Generously grease a spring-form baking pan and sprinkle the edges with a flour. You can also cover the bottom with a baking sheet.
Pour out the carrot cake mixture into the baking pan and bake it for about 40 to 50 minutes. Check the cake before the time is up. It should be orange-brownish from the outside and well baked from the inside.
After the cake is done take it out from the oven and let it aside for a while to cool. When the cake is only a little bit warm to the touch put it into a fridge to cool it completely. It might take an hour or so.
In a meantime mix all the ingredients for the filling (powdered sugar, vanilla extract, mascarpone, butter) together until smooth. After the cake is chilled completely take it out from the fridge. Take a long knife and cut the cake endways on half and separate them.
Half of the filling put on a bottom side of the cake. Put the other half of the cake gently on a top. Now put the remaining filling on a top of the whole cake and smoothly cover the top with it. You can make the top pretty by sprinkle it with a cinnamon. Slice the cake, serve and enjoy 🙂
The cake is even better when is all done with all the filling and you let it cool in a fridge for half an hour or so. Or you can make this cake night before you serve it.
