Healthy Mozzarella-Avocado Buckwheat Risotto

Very healthy and good tasting gluten free Buckwheat. With mozzarella, radish on butter and lamb’s lettuce. And of course avocado slices.


Buckwheat … one of the world’s healthiest foods. Yap, that’s right.

I didn’t know what a buckwheat actually is. I knew that this buckwheat should be super healthy but I have never eat it before. More specifically I didn’t have a desire to eat it. It sounded too healthy and too untasty to me.

But a few weeks ago I was out with my mom and friends. We stopped by a restaurant in my hometown. It’s not a very big city but I have never been in that restaurant before. It looked really nice and cozy. I took the menu list which was not so full with many meals but still full with healthy meals. I saw a buckwheat meal which surprisingly get my attention to. So I thought I might give it a try. To be honest I was a little curious about this buckwheat meal.

The waitress came to our table and a big bowl full of something beautifully looking set down on a table right in front of me. ,,It was supposed to be a buckwheat. It should be buckwheat right? “ Yes, it was. ,,But why it smells so good and it looks delicious?”

I couldn’t wait any longer. I took a bite from it and I was very surprised. Like beyond surprised. ITS SO GOOD! Its delicious!

Really it was very very good. I would never believe that buckwheat (which is very healthy) would be tasting That good. Maybe it’s just in our minds that: ,,Healthy food it’s not delicious at all”. But it’s not true obviously. I really think that it’s only in our minds. But the truth is that for many people it is a very weird taste and it has his own flavor and specific taste and not many people are satisfied with it. But if you prepare some healthy food good enough with some good seasonings you will love it.

And that’s how we slowly learn to eat and more importantly to like a healthy foods. At least that’s how I learn 🙂 And I really enjoy it. I’m very happy to eat some healthy food with knowing that it’s also good for my body and my health care. If our mouth and tummy is happy than the rest of our body should be too … 🙂

So what this buckwheat actually is? While many people think that buckwheat is a cereal, it’s actually a fruit seed that is related to rhubarb and sorrel making it a suitable for grains for people who are sensitive to wheat or other grains that contain protein glutens. Common in Asia, but most common in Europe or North America.

And why it is healthy and so good for our body?

Because Buckwheat is:

  • gluten free
  • high on antioxidants
  • easily digestible proteins
  • fat alternative
  • high level of rutin
  • magnesium
  • carbohydrates
  • iron


What does it do with our body:

  • may help diabetes
  • great for the digestion
  • is good at drawing out retained water
  • its a warming food
  • helps lower inflammation
  • helps fight blood pressure and cancer
  • is low on the glycemic index

So I brought to you a little bit of ,,wisdom” about Buckwheat. Don’t know why though. Maybe I’m just so exited and happy that it’s both delicious and healthy. Because many times is tricky for me to find something healthy and with a good taste. And I think also for many children it is hard.

So thank you Buckwheat for being so delicious :)

Healthy Mozzarella-Avocado Buckwheat Risotto

Serves: 2-3 Cooking Time: 25-30 min


  • 1 cup Buckwheat
  • ¾ cup Radish
  • 1 Mozzarella (125g)
  • a few leaves of Lamb’s Lettuce
  • 1 Avocado
  • 3 Tbsp. Butter
  • 1 Tbsp. Olive oil
  • 1 tsp. Salt
  • pinch of Black pepper



Cook the buckwheat according the package directions ( I cooked mine just like a rice: 1 cup of buckwheat + 2 cups of water + 1 tsp. of salt. And cook for 15-20 minutes).


In a meantime preheat the butter with olive oil in a large pan on medium heat.


Cut the radish on a thin slices and add them into the pan. Let them cook on a butter for 4-5 minutes.


Add the cooked buckwheat into the pan.


Mozzarella cut into small pieces and add it to the pan. Gently stir for about 2-3 minutes. Sprinkle with pinch of black pepper.


Serve with Lamb’s lettuce and slices of avocado.
