Easy grated Apple Pancakes with Agave – Cinnamon Syrup on a top
What can I say?
Everybody loves pancakes, right! Or not? Is there anybody who doesn’t love pancakes? Raise your hands. Or, give a comment on how much you do or don’t love pancakes.
I love pancakes, but I don’t really eat them on every second or third breakfast. Not even once in a week. I usually eat them on a special occasion, or when you just need something warm and sweet and delicious, and most of all you have the mood for making pancakes. Because making pancakes should be fun and happy moments. Like when you are at home with your family watching nice movies by the fireplace and then comes this feeling when you ask: ,,Who wants pancakes?”
,,Me … Me … !”
So you go and make pancakes for your beloved ones. Or you make them together with somebody. That’s even better and joyful.
Speaking of special occasions, this time we didn’t have any special one. This time we just wanted pancakes. Or maybe there was. It was a day that we realized that this year was a very hard year for us. And still is. The year 2017 was full of new things, changes, challenges, overcomes … And this year I have a feeling that I’m wasting my time. I don’t know where it comes from, I’m only 24 and I have a feeling that the time flies so fast, the days and weeks are passing by in front of my eyes and that I haven’t done enough, or that I haven’t done many things that I wanted. I’m a person who enjoys the life, loves adventures, traveling and seeing new places, meet new people, eating new delicious food, doing something crazy, joyful and fun. That’s how I imagine my life to be. And I’m living my life like this. At least I’m trying as hard as I can to be happy, do things that I want and just enjoy the life and adventures in my life.
But lately, this year specifically, I don’t have that feeling that I’m enjoying the life as I would want.
Sure, we had some adventures, trips, we have been on a new places and countries, saw beautiful nature, done amazing things. We have been in England, saw a very nice cities. But… I just feel like it’s not enough. Lately I feel like I would want to have at least 5 lifetimes that I could enjoy the most of them. But, we only have one lifetime, so the best thing what we can do is to enjoy it as most as we can. And live it to the fullest.
Everybody wants to enjoy their life. And they should. You should. Because everybody deserves to be happy and live a joyful life. No matter where you are, or what you do, or what kind of job you have, no matter how many problems you have. Forget the problems and enjoy your life. Or at least try to forget about your problems for a few minutes or hours and be happy and enjoy your life. Because it’s amazing! And if not, try to imagine how would you like your life to be. How would you like to enjoy it. With whom you would like to enjoy it. Try to picture it, feel it, feel the happiness that gives you that feeling and imagination. Because the feeling that you have that’s the most important thing and step towards your dreams and happy and joyful life to come true.
And if I could help you with that, go make those pancakes. They will make you happy. And the best is when you’ll make them with someone who you love and enjoy to be with. It’s gonna be fun, I promise. Just enjoy it and everything is going to be fine. You’re gonna be happy and those pancakes will be delicious 🙂
Apple Pancakes with Cinnamon toppingPrint Recipe
- 2/3 cup all-purpose Flour
- 2/3 cup whole-wheat Flour
- 1 ½ tsp Baking Soda
- 1 Tbsp Brown Sugar
- pinch of Salt
- 1 cup Milk
- 1 Egg
- 2 Tbsp melted Butter
- 1 ¾ cup grated Apples
- #For the Topping:
- Agave Syrup
- 1 apple
In a bowl mix both flours with baking soda, sugar, pinch of salt. Add all the remaining ingredients, apples on the end and stir everything well until combined.
Place a small pat of coconut oil (or butter/any kind of oil) on a hot skillet. Pour a scoop of pancake batter and let it spread out. Wait a few minutes until you see bubbles and the bottom looks dry. Flip the pancakes with a spatula and cook for a few minutes on the back side.
When you have all the pancakes done mix both ingredients for the topping in a small bowl. Use about ½ cup of agave syrup with 1/3 tsp of cinnamon.
Cut the 1 remaining apple into small pieces and let it fry for a few minutes on a hot skillet with a small pat of butter or coconut oil.
Serve the pancakes with the flamed apple on a top and pour with the cinnamon topping.
