Here it comes people – kids – friends … everybody 🙂 The School time is here!
Some kids don’t really like school. Like I did. But some kids actually like to go to school. They enjoy the school times more than other kids. I admire them if you ask me.
But I think that all the kids love holidays the most. Am I right?
The summer time, freedom from school, meeting with friends, swimming in a lake, having fun, going on a holidays with parents, be on a beautiful beach somewhere in the Bali drinking coconut water… etc.
Speaking of holidays on a beach. Have you enjoyed your holidays this year somewhere by the beach? I do hope so, and I hope that you had a wonderful time. Because haven’t been anywhere this year, to be honest. We didn’t go on a big holiday – journey. We did plan for some big holiday, but somehow it didn’t work out. We were planning to go on a Bali after we left the job in England, but… didn’t happen. We had lot’s of work, I was starting my new blog and we were actually scared of our money, although we had enough. It has been just in our minds. But it’s ok. I don’t regret that.

But now we promised ourselves a Big/Huge Holiday next year. I’m very excited.
I like holidays. And especially kids like holidays. I remember when I was very young I’ve always loved when our whole family went somewhere on holidays to the beach, to a different country.
So I think that every kid is a little sad that the holiday time is over and a little mad that they have to go to school again. Ha-ha. And the things that are waiting for them:
- New year at school
- New notebooks to fill
- Lot’s of things to learn the whole year
- Sleeping until 11-12 am is over
Fun time is just over. That’s how I saw it in my school times. That the fun time is over and the serious school times are starting again. Oh, I hated school. Don’t blame me. I’m just happy that the school is behind me. And if I could choose between school and work I would definitely choose the work. Duh 🙂
And what the school time mean for parents? Well, I’m not a parent, but I think some of those things like:
- Waking up kids everyday
- Making them breakfast
- Dropping them at school
- Pick them up from school
- Doing homework with them
- And let’s not forget making lunch and snack for your kids.
And that brings me to the point where I show you my VERY EASY and VERY QUICK OATMEAL BARS. Oh, and of course VERY HEALTHY.
Look how easy it is:
- Mix almonds and dates in a food processor
- Melt a coconut oil, honey and vanilla
- Mix everything together with oatmeal
- Pour into the baking pan and spread some chocolate chips
- Refrigerate for 2 hours
You can make that a night before and in the morning you just take them out from the fridge, cut them, pack them and your lunch snack for your kids is done in a few minutes. Oh, and one more special thing. If you want the bars for yourself too and you would like something more energetic for work you can add a Guarana coffee into them 😉 But be careful, don’t make the Guarana bars for your kids.
Honestly, they are very good, healthy, chewy, rich and energetic. Little snack full of something good and healthy when you’re hungry and you don’t really have time to eat something.
Back to School Oatmeal BarsPrint Recipe
- 2 cups Oatmeal
- 1 ½ cup Almonds
- 1 ½ cup Dates
- 1 Tbsp Guarana Coffee (optional)
- 3 Tbsp Coconut Oil
- 2-3 Tbsp Honey
- 1 Tbsp Vanilla extract
- 100g Chocolate Chips (about 1 cup)
In a food processor, mix the almonds with dates (without pits) until grounded mixture. About 10 seconds. Transfer it into a big bowl with oatmeal and Guarana coffee.
In a small pot, melt the coconut oil, honey and vanilla extract over medium high heat and stir constantly . Pour the mixture into the bowl with oatmeal. Gently stir until everything is well combined.
Transfer the mixture into 9-inch baking pan lined with an aluminum foil or baking paper. Firmly press (hard) the mixture with a spatula or spoon into the pan.
Now scatter the chocolate chips over the oatmeal mixture and try to press them as much as you can into the mixture.
Cover the pan with an aluminum foil and refrigerate for about 2 hours.
After 2 hours, put the pan out of the freezer and set aside for 20-30 minutes to chill a little bit. Remove block of oatmeal mixture from the pan and cut it into bars. Tadaaa!
The Guarana coffee put only into your bars as wanted. Do not make the bars for your kids with Guarana 😉
