4 ingredient, Gluten Free Potato Salad with Mayonnaise and lot’s of Basil from Barcelona
The Story of this Basil Potato Salad comes from far, far away. And also from long, long ago.
It would be probably around 10 years ago.
When I was around 13 or 14 years old, my mom, my dad and I were on a short trip or holiday let’s say in Barcelona. Sadly, I don’t remember much of the trip, it’s more like a dream now. But I do remember a few things. And one thing that I remember very clearly were those Basil Potatoes.
We were in Barcelona for one week maybe. As I said, I don’t remember what places we have visited, or the culture… non of it. I just remember the beach. It was a very nice beach and Me – the crazy and funny girl who loves water until the end of life, has to remember the beach, right? 🙂
One day we were shopping in a supermarket and they had many kinds of Olives. And such a big olives. I have never seen that big olives in my life. They were huge! They all were in a big kind of tub or canister. People could take as many as they want and scoop them into a box and then pay for it.
My dad loves olives so we took a little from every kind.
I didn’t like olives. I couldn’t eat them. But in Barcelona when I tried them, I fell in love with olives. From that moment I loved olives so much. The best olives in the world. If you like olives I would encourage you to buy olives from Spain.
We have found one very good restaurant. We were eating lunch there every day. And the Basil Potato salad comes from that restaurant. Me, my dad and mom we all loved them so much. When we came back from Barcelona once a time we made them at home. They are very easy to make. But somehow through the years we forgot about them and didn’t make them very long time. And this summer my mom remembered those and made them for us. Oh, they were delicious.
They are very good at the summer time, but also anytime you want.
I think they are best at the summer time because the basil reminds the summer a little bit. The basil flavor and taste… Oh, summer.
But don’t be afraid to make them anytime you want. Maybe they will be great at the winter time when it’s cold and you want to feel warm and you want to remind yourself a summer time. The Basil Potatoes would be good at that time that you would like to feel like in summer, or holidays.
– Maybe I just don’t want the summer to be over yet. I know it should be and it’s already the fall coming up but, I just love summer the most and I don’t really appriciate cold weather. I’m still learning to, believe me. But I just love summer, what can I do. –
But I have to warn you. They are not going to make you so warm because the salad is completely cold. But they will remind you and give you that feeling of summertime. I’m sure of that.

Basil Potato SaladPrint Recipe
- 1kg Potatoes
- 1 cup fresh Basil
- 230ml Mayonnaise (about 1 cup)
- 2 ½ tsp. Salt
Wash the potatoes and leave the skin. Cover with water and add 2 teaspoons of salt. Bring them to boil and cook for about 10-13 minutes (depends on a size). Try them with a fork if they are just almost soft.
After the potatoes are cooked, drain them and let them aside to cool. If they are just warm to touch, peel the skin and let them cool completely in a fridge.
After potatoes are cooled, transfer them into a big bowl. Add the mayonnaise and chopped basil. Give it a gentle stir until well combined.
Serve with olives, vegetables or eat just by itself.
