Blackberry Raspberry Summer Cake

Greetings everybody! Yet again, another cake inspired by Mary Berry that I have adjusted from one of her baking cookbooks!

Today I’m brought you the greatest Summer Cake of the year. Seriously guys. This cake is a heaven and earth when it comes to fruits filled in a delicious mascarpone filling along with a yummy cake crust. Just HEAVEN! The truth is that I never got bored of eating this cake. I even ate this cake this morning for a breakfast. No judgment. Breakfast is a funny thing sometimes, don’t you think? Somebody eats cake for a breakfast, somebody eats pizza, which I have never done. I mean. Come on. Pizza for breakfast? How weird is that!

This cake, however, has a little story behind. Those blackberries that are inside of that cake – once again, delicious cake – are not from a supermarket actually. Not even from our garden. Well, we would have to have some garden to have blackberries or some other fruits, right? But unfortunately, we don’t. The one of (maybe) two downsides of our living. I really miss a garden. I grew up in a house with a huge garden where I spend my whole childhood waking up and going into the garden in my pajamas. Haha. When I think about it right now it’s a little hilarious thing to do. But it’s awesome. As long as your neighbors don’t see you.

Those blackberries we found in nature on a way home from spending almost the whole day at a lake. We past by huge bushes of blackberries. There were so many of them. So we thought. Why not take them. The only thing we had was a plastic bottle so that we could put them somewhere.

A full bottle of blackberries straight to the oven in a delicious cake. They were used well 😉

By Serves: 8-12 Cooking Time: 40-50 Minutes


  • Cake Crust
  • 100g Spelt Flour
  • 100g Plain Flour
  • 1 tsp. Baking Powder
  • 50g Brown Sugar
  • 100g Butter (room temperature)
  • Filling
  • 250g Mascarpone
  • 1/2 Lemon Juice
  • 1 Egg
  • 40g Brown Sugar
  • 1 tsp. Vanilla Extract
  • Toppings
  • Blackberries and Raspberries (about 1 cup each)
  • 3 Tbsp. Spelt Flour
  • 3 Tbsp. Oats
  • 2 Tbsp. Brown Sugar
  • 3-4 Tbsp. Butter (room temperature)



Preheat the oven to 360 degrees (180c). Grease your 9-10 inches round cake pan with a butter.


Mix all the ingredients for a Cake Crust in a bowl. Using your hands form the mixture into a dough. Place the dough in a centre of the pan. Gently form the whole dough into the pan by pushing it with your hands covering also the sides of the pan.


Mix all the ingredients for the Filling using a hand mixer until a smooth mixture. Scoop the mixture into a pan with dough and evenly spread it with a spatula. Top it with blackberries and raspberries or any kinds of fruits you like.


Now mix all the remaining ingredients for the topping using your hands again until everything is well combined. Sprinkle the mixture over the top of the cake.


Put the cake in the oven and bake for about 30-40 minutes until the edges are golden brown.


Take the cake out of the oven and let it chill for a while before you eat it. You can even top it with fresh fruits. Invite your friends for a cake and enjoy it together 🙂
