Easy, Very Quick and Healthy Butter Potatoes With Fresh Dill and Cauliflower

Yey, Yey, Yeeeey!! Butter Dill Potatoes with Cauliflower is here! Alive, breathing (no, not breathing … just kidding).
And I’m super super excited because this is another favorite meal from all of my favorite meals. You know, I got a lot of favorite meals. Some of them I can’t even remember. But, I can for sure remember those that are already here on my beloved blog which is a big place for you guys too. Because those recipes, my favorite recipes, delicious recipes, easy recipes … all the recipes are here for You. I make those for you. Share them with you. I’m always trying to bring the best ones for you as possible. Because it brings me no more happiness than to know that you like my recipes. Or even more to hear that some of my favorite recipes are also your favorite ones. That just Awesome!

Well now. Obviously, I have a lot more favorite meals than just those listed. And I promise you will see more of my favorite, delicious meals and recipes. It’s not the end of the list yet, don’t worry.
But now let’s talk about the actual favorite meal or recipe that is happening now, right here. The BUTTER DILL POTATOES with CAULIFLOWER. Yep. That is happening. But first I have to confess that those Dill Potatoes are best in a summer or warm days. And now it’s cold, windy, snowy, and well, it’s winter. So this is kind of a jump from a road. But, on a bright side, maybe You, yes You, might be on the other side of our Earth, or just lower in those warm countries where the sun is shining and burning and it’s so lovely warm outside. And you might even just came from the beach and now you are searching for something for your lunch. Then this could be your lunch. It’s easy, very quick, healthy and of course Delicious. Plus, it’s my favorite lunch. Which I can eat even in winter when it’s cold outside. I don’t really mind. Because I just love those Butter Dill Potatoes. In fact. I think that’s the only meal where I really like the fresh dill. My mom makes one specific meal with dill which I don’t enjoy that much. But those potatoes … Oh. Delish!

Butter Dill Potatoes With Cauliflower

- Dill Potatoes
- 4-5 big Potatoes
- 1 bunch fresh Dill
- 4-5 Tbsp Butter
- 2 tsp Salt
- 1 head Cauliflower
- 2 tsp Salt
- Cucumber salad
- 1 cucumber (medium or big)
- 1 small onion
- 150 ml Water
- 3 Tbsp Vinegar
- 3-4 Tbsp Sugar or Honey
- 3/4 - 1 tsp Salt
- 1/4 tsp Paprika
- pinch of black pepper
Instructions
DILL POTATOES:
Peel and cut the potatoes into small squares. Bring a water to a boil in a large pot. Add the potatoes with 2 tsp of salt and cook them for 15-20 minutes or until the potatoes are fork tender.
Cut the cauliflower into florets and cook them in another pot with 2 teaspoons of salt for 13-15 minutes until fork tender.
Very gently chop the dill. Use only the leaves of the dill, and discard the thick stems.
Add butter to a nonstick skillet and let it melt over medium-high heat. Add the chopped dill and saute for few minutes (5-7). Turn the heat down to medium and stir constantly.
Add the butter and dill into drained potatoes and gently stir until all the potatoes are covered with dill.
CUCUMBER SALAD:
Cut the cucumber and onion into thin slices. Add all the remaining ingredients into a big cup or bowl and mix until well combined. Pour the dressing into the cucumbers with onions.
Serve the potatoes with cauliflower (on which you can add some extra butter) and cucumber salad.
Notes
The cucumber salad will be probably too much for just 3 servings. You can make a half of the cucumber salad or you can eat it later just by itself if you will have an extra. Just keep it in a fridge if it's gonna be for later. If you'd like to go a Vegan on this one, just skip the Butter.
