Lovely Gingerbread Cupcakes made from Spelt Flour and Coconut Oil

Gingerbread smell, nice decorations and lights everywhere, decorating Christmas tree, sharing beautiful and awesome presents, baking delicious cakes, happy family time … that’s what Christmas is all about!
I love Christmas! Do you too? When I think about it I don’t know anybody who hates Christmas except Grinch, Ha-Ha. Christmas is all about nice and wonderful time with our family. It’s a happy, cheerful time full of Love.
And that’s why I would like to share with you some beautiful poems about Happiness, Harmony, Joy and Silence … because ,,Silent Night, Holy Night … ” you know how it goes 🙂
Happiness
Do you want to be always happy? Then give up fighting For negativity And learn the beautiful art Of self-encouragement. Be happy, be happy! Unless you are happy, Your outer life will not succeed And your inner life will not proceed. True happiness Is not a mental hallucination. True happiness Is not a complacent feeling. True happiness Is the spontaneous feeling of joy That comes from knowing You are doing the right thing And leading a divine life.
Harmony
If you can create harmony In your own life, This harmony will enter Into the vast world. Look in the mirror And what you see in yourself, Try to see in others. If you see perfection in your life, Then see perfection in others. If you see imperfection in yourself And forgive yourself for your imperfection, Then try also to forgive others Who have the same imperfection. The experience of oneness In darkness or light Brings about harmony. As millions of stars Sing and dance together In harmony, Even so, our body, Vital, mind and heart Must sing and dance In harmony.
Joy
Peace means joy; Joy means peace. Peace and joy can never Be separated. When we get joy, Let us sleeplessly continue Doing the right thing To receive More joy and abundant joy. We try to get joy by dividing, But real joy Comes from uniting.
Silence
Silence is not silent. Silence speaks. It speaks most eloquently. Silence is not still. Silence leads. It leads most perfectly. Silence is wisdom, Silence is truth, Silence is the beauty and fragrance Of Heaven. Silence, silence, silence. Silence awakens the sleeping seeker in me. Silence enlightens the aspiring seeker in me. Silence fulfils the self-giving seeker in me. Silence, silence, silence.

Gingerbread Cupcakes

- Cupcakes
- 2,8 oz (80g) Coconut Oil (melted)
- 7 oz (200g) whole wheat Spelt Flour
- 100ml Milk
- 2 Tbsp Cocoa
- 3,4 oz (100g) Honey
- 2 Egg
- 100ml Buttermilk
- 2 tsp Baking powder
- 4 tsp Gingerbread powder
- pinch of Salt
- Frosting
- 17,6 oz (500g) Mascarpone
- 2 Tbsp Honey
- 2 tsp Vanilla Extract
Instructions
Preheat the oven to 350 degrees (180°C)
Mix all the ingredients for cupcakes together until well combined. Prepare paper liners to the muffin tin. Scoop the batter into a muffin tin, filling each muffin tin about 2/3 of the way up. Let it bake for 20-25 minutes until golden brown tops.
While the cupcakes are baking prepare the frosting by mixing mascarpone, honey and vanilla extract together until smooth. Transfer to a plastic bag or a tool for piping the frosting and decor your cupcakes.
