So. Remember when I mentioned my obsession about buckwheat lately? Well, it’s really happening.
Since I find out about super-healthiness of buckwheat and since I love the taste of it I can’t stop eating it. I’m eating buckwheat almost every day. In any forms. Like Vegan Detox Buckwheat Salad, Buckwheat Risotto, even Buckwheat porridge or oatmeal. Let’s saaay … Buckmeal? Is that even a word? And those Super delicious Buckwheat Pancakes. Which are Vegan, BTW. Completely Guild free. And I gotta tell you. Those are absolutely delicious and yummy. If I would choose to eat one kind of pancakes for the rest of my life it would be those! I was a little bit scared what will come out of them when I was making them for the first time. But I have to say that they really surprised me. Especially the buckwheat flour. I had doubts about the buckwheat flour. But I guess that my obsession about buckwheat is bigger than I thought.

So. Why are those pancakes so healthy? Because all they have is:
- Buckwheat Flour
- Almond Milk
- Coconut Oil
- Brown Sugar (I always use only brown sugar. For everything)
The best thing about them is that they are super healthy and super delicious. Isn’t it the best combo ever?
And don’t forget the yummiest stuff! Maple Syrup, Banana, Raspberries, Blueberries, Strawberries, any kinds of berries. Maple Syrup and Berries are the most important thing about pancakes.

I tell you. I would really eat those all day every day. Well ok. Maybe not all day. Haha.

Life Changing Delicious Vegan Buckwheat Pancakes

- 1 cup Buckwheat Flour
- 1 tablespoon Brown Sugar
- 2 teaspoons Baking Powder
- pinch of Salt
- 1 cup Almond Milk
- 1/4 cup melted coconut oil
- Maple Syrup
- Raspberries, Blueberries or any kinds of berries for topping
Instructions
Mix all dry ingredients in a bowl. Then add almond milk and coconut oil and mix until smooth.
Preheat a small pan over medium-high heat with a teaspoon of coconut oil.
Spoon one pancakes' worth of the mixture into the pan. When you will see bubbles and the edges start to look dry and brown carefully flip the pancake and cook for another one minute or two on the other side.
Top the pancakes with a Maple Syrup, any kinds of berries or anything you like. Enjoy 🙂
