Yummy Cheesecake from White Chocolate and Mango with wine Biscuits.

When I was in high school, I didn’t exactly know what I want to do in my life, what kind of job I want, where to be, what I want to be. My whole life I never did. Since I was very little, basically in a kinder garden my parents signed me for swimming because I loved the water and they kind of pushed me in that direction. So I was practically swimming my whole life. And that was all I was doing and was patented about. Nothing else. Well, when I don’t count movies and music, I always loved to sing … that was all.
So I had very little amount of things for my future to choose from. Just the swimming and that was it. But honestly, I never wanted to be a coach for swimming. No idea why though.
Anyway, It was my last year of high school and it was time for me and everybody in my class to send a college application, but I still had no idea what I want to do or on which collage I want to go. I haven’t even wanted to go to college, because I didn’t like school from the first day I had to sit there and learn a bunch of useless stuff (for me). School taught me many good things and very well, I would lie if I would say that everything was useless. But many things were very useless for me because today I’m using just about 30-40% of what school taught me. I just didn’t like the school times. But anyway, I have sent maybe 2 collage applications, but none of them accepted me. Maybe it was because I didn’t want to be accepted.
I finished high school and since the collages didn’t accept me I had set down and thing what I should do next.
And one day I have received an e-mail from my friend asking me if I would like to go to Florida and work in a restaurant where she worked. I was surprised – like beyond surprised. I was in shock, but in a good way. And the first thought that cross my mind was: ,,Florida? OK, why not!”. To be honest I was a little scared but exited too. I have never been in Florida. For me it was a very big world and very far from my home. But I didn’t know what else to do, so that was my only option.
When I told my mom that I will go to Florida she was speechless, surprised and then sad. But eventually she was happy for me.
So I was about to go to Florida. It was unbelievable. And a moment when I actually realized that was when I was sitting in a plane to New York from where I flew to Florida. That was a moment when I finally realized that: ,,Oh my gosh, I’m going to Florida, No Way!! Ha-ha. “ I was very exited!
Florida was amazing. Totally different country from mine. It felt like a completely different world to me. The nature was beautiful, the streets were very clean, people very kind and in a different life style then people from my country. I was working in a small but very nice Vegetarian Restaurant, going on a beach every once in a week, running by a ship’s port every night, visiting my favorite coffee shop Starbucks … It was such a nice holiday for me. Even though I was working it was a holiday for me. Because I was just working from 9am to 4pm, so I had lot’s of free time. It was amazing for me.
But I could only stay there for a 5 months because of the Visa. But I have fully enjoyed it 🙂
And I wrote about my trip to Florida because that ,,Mango White Chocolate Cheese Cake” is from a Florida restaurant where I was working. But I apologize, I don’t remember the name of that restaurant. It was about 6 years ago. I only remember that it was in Tampa city.
So I hope you enjoy the Mango White Chocolate Cheese Cake as I did on my 5 months holiday in Florida 🙂

Mango White Chocolate Cheesecake

- 250g Packet wine Biscuits
- 125g melted Butter
- 300g Cream Cheese
- 3 Tbsp. powdered sugar
- 3 Eggs
- 300g White Chocolate
- 300ml Cream, Half and Half
- ¾ cup Mango
Instructions
Preheat the oven to 350 degrees.
In a food processor, mix the biscuits until powder. Add the melted butter and mix again. Transfer it into round 9 inch pan and cover the bottom by pressing it with a spoon. Put it into the oven and bake it for about 13 to 15 minutes.
In a meantime, preheat the whipped cream in a small pot and let the white chocolate melt in it.
In a big bowl, mix the cream cheese, powdered sugar and eggs until combined. Add the melted white chocolate and mix well.
Mix the mango in a mixer just for a few seconds (3 to 4 or so), so that you can have a few big bites from it. Add it into the cream cheese mixture and gently stir.
After the biscuits are baked put them out and turn the oven down to 150 degrees.
Pour the cheesecake mixture into the baking pan. Put the 9 inch pan on a big baking pan because the mixture is very liquid so it might come out just a little.
Bake it for about 1 hour.
