What is Volcano Chicken?

Volcano chicken comes as a crisply cooked chicken dish, which is coated in a sweet, savory, and delicious sauce. It also is seasoned with an apricot kick.

The chicken is sprayed with eggs, cornstarch, or flour. For an additional flavor of crispness, you could make the chicken breaded with breadcrumbs.

However, the breading using just cornstarch, flour, or egg can give you a lovely and crisp shell that perfectly absorbs the glaze and is a great way to test it until you’ve tried it!

Which part of the Chicken Should I Use?

To cook volcano chicken, I prefer chicken breasts. The breast of the chicken allows for perfectly cut portions of the chicken.

I’ve never utilized any other piece of the bird, so I can’t give suggestions on how other cuts work with this recipe. However, you’re always free to try it out in your kitchen.

Apart from the chicken breast, I also recommend deboned legs and thighs of chicken, but they’re not identical and attractive as chicken breasts.

How to Serve Volcano Chicken

My preferred method of serving the volcano chicken is to serve it with cooked rice. Sometimes, I just use plain white rice, or sometimes Jasmine; however, brown rice can provide the healthiest food.

My top ingredient for this recipe is spring onion. It not only provides the perfect contrast and a nice spiciness, but it also enhances the food in the sense of flavor combinations.

If you’re looking to add some crunch, I suggest you dust your chicken with sesame seeds, either raw or toast them.

In addition to rice, you could serve your chicken with steamed broccoli or broccoli, cauliflower, or any other vegetables you like.

  • 1/2 tbsp honey
  • 1/2 2 tbsp butter
  • Chili powder, as you like

Instructions

Clean the chicken using paper towels, then cut it into 1-inch cubes. Make sure all pieces are of the same height so they cook equally.

Perhaps you’ve been in contact with or read about people washing their chickens; however, please do not do this. The chicken you wash will do harm, and instead of washing it clean, it creates bacteria in the internal parts of your chicken. Therefore, you should just dry it, and that’s all it takes.

The chicken should be seasoned using salt and pepper.

In a bowl, mix flour or starch with salt and pepper, and mix with the chicken. Sprinkle the eggs lightly with salt, then beat them until they are frothy.

Two inches of oil should be heated in a pan on a medium-high flame. The chicken is coated with the cornstarch mixture, then dip it into eggs. Douse off any excess.

Cook the chicken in the oil on medium-high for 6-7 minutes. Take the cooked chicken out of the pan and put it aside in a bowl that is clean. Create the sauce: Combine all ingredients of the sauce in a pot. Bring the sauce to a boil. Cook for about 3-5 minutes.

Sprinkle the glaze on the chicken, then mix to combine. Serve the chicken with rice and sprinkle with spring onions. Enjoy!
